  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup shredded cheddar or Monterey Jack cheese
  • 6 large flour tortillas (burrito-size, about 10 inches)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a wooden spoon, until no longer pink (5-7 minutes). Add the diced onion and cook for 3 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant. Drain any excess liquid.
  2. Reduce heat to medium. Add the drained black beans, diced green chiles, cumin, chili powder, smoked paprika, salt, and pepper. Stir to combine and cook for 2-3 minutes until flavors meld.
  3. Transfer the mixture to a mixing bowl and let cool for 5-10 minutes. Stir in the shredded cheese (and sour cream or cilantro if using).
  4. Warm the tortillas in the microwave for 20-30 seconds or in a dry skillet for 15 seconds per side until pliable.
  5. Lay a warm tortilla on a clean surface. Spoon about ⅔ cup of filling into the center, forming a log shape. Fold the sides inward, then fold the bottom flap up and over the filling, tucking tightly. Roll the burrito away from you until sealed. Place seam-side down on a baking sheet. Repeat with remaining tortillas and filling.
  6. Let the assembled burritos cool completely at room temperature (about 20 minutes).
  7. Wrap each burrito tightly in aluminum foil, ensuring no air pockets. Place wrapped burritos in a freezer-safe bag or container, squeeze out air, seal, and label with date. Freeze for up to 3 months.

For best results, drain excess liquid from the turkey after browning to avoid soggy burritos. Let the filling cool before assembling to prevent condensation. Wrap burritos tightly in foil to maintain shape and prevent freezer burn.
