  • 1 tablespoon (5g) unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) buttermilk
  • 12 tablespoons red food coloring (gel recommended)
  • 1 teaspoon white vinegar
  • 8 oz (225g) block cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 34 cups (360-480g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease heart-shaped cupcake pans or line with heart-shaped liners.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar on medium-high speed for 3-4 minutes until pale and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract. Scrape down bowl sides.
  5. Add half of the dry ingredients to the butter mixture and mix on low. Add buttermilk and mix until combined. Add remaining dry ingredients and mix just until no streaks remain.
  6. Stir in red food coloring until desired shade is reached. Mix in vinegar.
  7. Divide batter evenly among liners, filling them about 2/3 full.
  8. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. While cupcakes cool, beat cream cheese and butter until smooth. Gradually add powdered sugar, vanilla, and salt. Beat on high until fluffy.
  10. Once cupcakes are completely cool, pipe or spread frosting on top.

Notes

Ensure all ingredients (butter, eggs, buttermilk) are at room temperature for best emulsion. Do not overmix the batter to avoid dense cupcakes. Use gel food coloring for vibrant color without thinning the batter. Store leftovers in the refrigerator for up to 3 days due to the cream cheese frosting.
