Instructions

  4. Whisk in the flour vigorously to form a roux. Cook for 1-2 minutes until light golden and toasted.
  5. Stir in the crushed dried sage leaves.
  6. Slowly whisk in the warm stock, about 1 cup at a time, to prevent lumps.
  7. Bring to a gentle simmer and cook for 5-7 minutes, stirring occasionally, until thickened to the consistency of heavy cream.
  8. Stir in the heavy cream and heat through for 30-60 seconds without boiling.
  9. Add pan drippings if using, and season with salt and pepper to taste.
