This meringue powder royal icing for gingerbread houses dries hard, holds tight, and pipes like a dream. It’s stable, safe, and reliable—perfect for building and decorating gingerbread houses with kids or for holiday parties.

Ingredients

Scale
  • 4 cups (about 480g) powdered sugar
  • 3 tablespoons (about 24g) meringue powder
  • 1/2 teaspoon cream of tartar (optional)
  • 1/2 cup (120ml) room temperature water
  • 1 teaspoon vanilla extract (or clear vanilla for pure white icing)

Instructions

  1. Sift the powdered sugar into a large mixing bowl.
  2. Add the meringue powder and cream of tartar (if using) to the sifted sugar and whisk together with a fork.
  3. Add the room temperature water and vanilla extract. Mix on low speed with a paddle attachment or hand mixer for about 30 seconds until incorporated.
  4. Switch to the whisk attachment and whip on medium-high speed for 5 to 7 minutes until stiff peaks form. The icing should stand up straight when the whisk is lifted.
  5. Adjust consistency: For gingerbread house construction, the icing should be stiff. If too thick, add water 1 teaspoon at a time; if too thin, add more sifted powdered sugar 1 tablespoon at a time.
  6. Let the icing rest, covered with a damp paper towel, for 5 to 10 minutes to allow air bubbles to rise and the meringue powder to hydrate.
  7. Fill a piping bag with a small round tip (or a Ziploc bag with a snipped corner) and pipe as desired.

Notes

For best results, use room temperature water and ensure all equipment is clean and grease-free. Let the icing rest for 5-10 minutes before piping for a smoother texture. Keep unused icing covered with a damp paper towel to prevent drying. For a stronger structural icing, add an extra 1/4 cup of powdered sugar.
