Ingredients

Scale
  • 1 loaf (about 16 oz) day-old gluten-free bread, cut into ½-inch cubes
  • 4 tablespoons unsalted butter, cubed
  • 2 tablespoons olive oil
  • 1 large yellow onion, finely diced (about 1½ cups)
  • 3 celery stalks, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh sage, chopped (or 2 teaspoons dried)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1½ cups low-sodium chicken or turkey broth (use vegetable broth for vegetarian version)
  • 1 large egg, lightly beaten

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Toast the bread cubes: Spread the gluten-free bread cubes in a single layer on your large baking sheet. Bake for 10-12 minutes, stirring halfway through, until they’re lightly golden and feel dry to the touch.
  3. Sauté the vegetables: While the bread toasts, heat the olive oil and 2 tablespoons of butter in your large skillet over medium heat. Add the diced onion and celery, and cook for 6-8 minutes, stirring occasionally, until they’re soft and translucent. Add the minced garlic, salt, and pepper, and cook for another minute until fragrant.
  4. Add the herbs: Stir in the fresh sage, thyme, and rosemary. Cook for 1 minute more, letting the herbs release their oils.
  5. Combine everything: Transfer the toasted bread cubes to your large mixing bowl. Pour the vegetable-herb mixture over the top and toss gently to combine.
  6. Prepare the liquid mixture: In a small bowl or measuring cup, whisk together the chicken broth and the beaten egg. Pour this over the bread mixture slowly, tossing as you go. The stuffing should look moist but not soupy.
  7. Transfer to baking dish: Grease your 9×13-inch baking dish with the remaining 2 tablespoons of butter (or spray with cooking spray). Spread the stuffing evenly in the dish. Don’t pack it down.
  8. Bake to perfection: Cover the dish with foil and bake for 25 minutes. Then remove the foil and bake for another 15-20 minutes, until the top is golden brown and crispy.
  9. Rest before serving: Let the stuffing sit for 5-10 minutes after it comes out of the oven.

Notes

Toast the bread cubes before baking to prevent sogginess. Add broth gradually to avoid over-moistening. For make-ahead, assemble through step 7, cover, and refrigerate; add 10 minutes to covered baking time. Leftovers keep in the refrigerator for up to 4 days or freeze for up to 3 months.
