  • 1/2 cup (130g) natural peanut butter
  • 1/4 cup (85g) honey or maple syrup
  • 2 tablespoons (10g) unsweetened cocoa powder
  • 2 tablespoons (14g) flaxseed meal
  • 1 tablespoon (12g) chia seeds
  • 1/4 cup (45g) dark chocolate chips (70% cocoa or higher)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. In a large mixing bowl, whisk together the rolled oats, flaxseed meal, chia seeds, cocoa powder, and a pinch of sea salt.
  2. Add the peanut butter, honey (or maple syrup), and vanilla extract. Stir until fully combined and the mixture holds together when pressed.
  3. Fold in the dark chocolate chips until evenly distributed. If the dough is too sticky, add a tablespoon more oats; if too dry, add a teaspoon of water or more honey.
  4. Cover the bowl and refrigerate for 15-20 minutes to firm up the mixture.
  5. Using a small cookie scoop or tablespoon, portion out the mixture and roll into smooth balls (about 1.5 inches in diameter). Place on a parchment-lined baking sheet.
  6. Refrigerate the rolled balls for at least 30 minutes to set. For a quicker option, freeze for 15 minutes.
  7. Transfer to an airtight container. Store in the refrigerator for up to a week or in the freezer for up to three months.

Notes

For best results, use room temperature peanut butter and don’t skip the chill step. Wet your hands slightly if the mixture sticks while rolling. These energy balls taste even better after a day in the fridge as flavors meld.
