  • 1 ¾ cups (220g) all-purpose flour
  • ½ cup (50g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup (150g) granulated sugar
  • ⅓ cup (80ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (175g) chocolate chips or chopped dark chocolate
  • ¾ cup (90g) chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan or line it with parchment paper.
  2. Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture to have about 1 ½ cups drained zucchini.
  3. In a large bowl, whisk together the dry ingredients: all-purpose flour, cocoa powder (sifted), baking soda, and salt.
  4. In a separate bowl, combine the wet ingredients: granulated sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth and slightly thickened.
  5. Slowly add the dry ingredients to the wet mixture, folding gently with a rubber spatula until just combined. Avoid overmixing.
  6. Fold in the grated zucchini, chocolate chips or chopped chocolate, and chopped walnuts until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top. Optionally, sprinkle extra chocolate chips or walnuts on top.
  8. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Check at 50 minutes to avoid overbaking.
  9. Let the bread cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely.
  10. Slice and enjoy warm or at room temperature, with or without butter.
