A quick, easy, and moist small-batch recipe for pumpkin chocolate chip muffins, perfect for solo snacking or sharing with a partner. These tender muffins require minimal effort and deliver maximum comfort with simple ingredients.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease or line a six-cup muffin tin.
  2. In a medium mixing bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In a separate bowl or large measuring cup, whisk together the granulated sugar, brown sugar, pumpkin puree, egg, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold together with a spatula until just combined; do not overmix.
  5. Gently fold in the chocolate chips, distributing them evenly throughout the batter.
  6. Divide the batter evenly among the six muffin cups, filling them about three-quarters full.
  7. Bake for 18 to 20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for five minutes, then transfer to a wire rack to cool completely or enjoy warm.

Notes

Ensure pumpkin puree is 100% pure pumpkin, not pie filling. Do not overmix the batter to avoid tough muffins. If using a 12-cup tin, adjust baking time slightly. Muffins can be stored in an airtight container at room temperature for up to two days or frozen for up to three months.
