A nostalgic, 5-ingredient slow cooker meal featuring tender chicken thighs and fluffy jasmine rice cooked in a savory ginger-sesame sauce. Perfect for busy weeknights and meal prep.

Ingredients

  • Boneless, skinless chicken thighs
  • Fresh garlic, minced
  • Fresh ginger, grated
  • Soy sauce (or tamari for gluten-free)
  • Toasted sesame oil
  • Honey (or maple syrup for vegan)
  • Rice vinegar
  • White Jasmine rice
  • Chicken broth (or vegetable broth for vegan)
  • Green onions, sliced for garnish

Instructions

  1. Pat chicken thighs dry and cut into bite-sized chunks. Place them into the slow cooker insert.
  2. In a small bowl, whisk together soy sauce, toasted sesame oil, honey, rice vinegar, minced garlic, and grated ginger until the honey is dissolved.
  3. Pour the sauce mixture over the chicken in the slow cooker and stir gently to coat.
  4. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  5. Add the rinsed rice to the slow cooker on top of the chicken. Pour in the chicken broth. Do not stir the rice into the chicken yet.
  6. Cover and cook on Low for 4 to 5 hours. Do not cook on High.
  7. Check the rice at the 4-hour mark; it should be tender and have absorbed most liquid. If needed, add a splash of broth and cook longer, or remove lid to evaporate excess liquid.
  8. Shred the chicken directly in the pot using two forks. Stir everything together to mix the chicken, rice, and sauce.
  9. Taste and adjust seasoning if needed. Garnish with sliced green onions before serving.

Notes

Use chicken thighs instead of breasts to prevent dryness. Rinse rice thoroughly to prevent mushiness. Do not lift the lid during cooking. For a spicy version, add chili garlic sauce or red pepper flakes. For a vegan option, swap chicken for tofu and broth for vegetable broth.
