Smoky Roasted Garlic & Charred Corn Guacamole (Easy Recipe)

This smoky, slightly sweet guacamole with charred corn and roasted garlic is a flavor experience that’s perfect for any occasion, from game days to taco nights.

Ingredients

  • 3 ripe avocados
  • 1 head of garlic
  • 1 cup corn kernels (fresh or frozen, thawed and patted dry)
  • 1 jalapeño (seeded and finely diced)
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice (fresh squeezed)
  • 1/2 teaspoon salt (plus more to taste)
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with a little olive oil, wrap tightly in aluminum foil, and place on a baking sheet.
  2. Roast the garlic for 35-40 minutes until soft and golden. Let cool, then squeeze the roasted garlic cloves out of their skins into a small bowl. Mash with a fork into a smooth paste. Set aside.
  3. While the garlic roasts, char the corn. Spread the corn kernels on the same baking sheet (or a separate one) and drizzle with a teaspoon of olive oil. Toss to coat. Roast for 15-20 minutes, stirring halfway, until deeply golden and charred in spots. Alternatively, char in a dry skillet over high heat for 5-7 minutes.
  4. Cut the avocados in half, remove the pits, and scoop the flesh into a large mixing bowl. Add the lime juice and salt. Mash with a fork to your desired consistency (chunky is recommended).
  5. Fold in the roasted garlic paste, charred corn, diced jalapeño, and chopped cilantro. Mix until just combined. Taste and adjust seasoning with more salt, pepper, or lime juice if needed.
  6. Cover the bowl with plastic wrap, pressing it directly onto the surface of the guacamole to prevent browning. Let it rest at room temperature for 10-15 minutes before serving to let the flavors meld.

Notes

For best results, use ripe Hass avocados. Char the corn properly for smoky flavor. Let roasted garlic cool before adding to avocado. Use fresh lime juice. Taste and adjust seasoning as you go. Guacamole is best served the day it’s made.
