Instructions

  1. Preheat your grill to medium-high heat, about 375-400°F (190-204°C), which takes roughly 10-15 minutes.
  2. In a mixing bowl, combine softened unsalted butter with minced garlic, lemon zest and juice, chopped herbs, smoked paprika, cayenne (if using), honey, salt, and pepper. Mix thoroughly until smooth and well blended. Divide into three small bowls if making multiple flavor variations.
  3. Remove husks and silk from each ear of corn. Pat dry with a towel.
  4. Using a spoon or spatula, generously spread your chosen zesty butter all over the corn, coating every kernel.
