A quick and easy frozen cocktail slushie combining fresh watermelon, dry rosé, lemon juice, and simple syrup for a refreshing summer drink that’s light, icy, and delicious.

  • 4 cups (600 grams) fresh seedless watermelon chunks
  • 1 bottle (750 ml) dry rosé wine
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons simple syrup (adjust to taste)
  • 2 cups (480 ml) ice cubes
  • Small handful of fresh mint leaves (optional, for garnish)

Instructions

  1. Cut about 4 cups (600 grams) of seedless watermelon into chunks, remove any seeds, and pat dry with paper towels to reduce extra water.
  2. Place the watermelon chunks in a blender and pulse until smooth, about 1-2 minutes.
  3. Optionally strain the puree through a fine mesh sieve for a smoother texture.
  4. In a large mixing bowl, combine the entire bottle of rosé (750 ml), 2 tablespoons fresh lemon juice, and 2 tablespoons simple syrup. Stir gently.
  5. Add the watermelon puree to the rosé mixture and stir well. Adjust sweetness by adding more simple syrup if desired.
  6. Pour about 2 cups (480 ml) of ice cubes into the blender, then add 2 cups (480 ml) of the watermelon and rosé mixture. Blend on high for 30-45 seconds until slushie texture is achieved.
  7. Repeat blending in batches if necessary, keeping finished slushie in a chilled pitcher or bowl.
  8. Serve immediately in glasses garnished with fresh mint leaves and a straw.
  9. Optional: For a thicker slushie, freeze the watermelon-rosé mixture in a shallow container for 1-2 hours before blending with ice.

Notes

Do not over-blend the ice to avoid watery slush. Adjust simple syrup to taste depending on watermelon sweetness. Fresh lemon juice is preferred over bottled for best flavor. For thicker texture, pre-freeze the watermelon-rosé mixture before blending with ice. Use ripe watermelon for best flavor. Substitute rosé with non-alcoholic sparkling rosé or sparkling water for alcohol-free version.
