Refreshing Lavender Honey Iced Tea with Lemon

A crisp, floral, and slightly sweet iced tea made with dried lavender, honey, and fresh lemon juice. Perfect for hot summer days and easy to prepare in under 20 minutes.

  • 1 tablespoon dried lavender buds (culinary-grade)
  • 2 black tea bags (Assam or English Breakfast recommended)
  • 1/4 cup (85 grams) honey (raw or local preferred)
  • Juice of 1 large lemon (about 2 tablespoons or 30 ml)
  • 4 cups (1 liter) cold water
  • Lemon slices for garnish (optional)
  • Ice cubes

Instructions

  1. Boil 4 cups (1 liter) of cold water in a saucepan or kettle until it reaches a rolling boil, about 5 minutes.
  2. Place 1 tablespoon of dried lavender buds and 2 black tea bags into a heat-proof pitcher. Pour the boiling water over them.
  3. Let steep for 5 to 7 minutes depending on desired strength. Avoid oversteeping to prevent bitterness.
  4. Strain out the lavender buds and tea bags using a fine mesh strainer. Press gently on the tea bags to extract maximum flavor and discard solids.
  5. While the tea is still warm, stir in 1/4 cup (85 grams) of honey until fully dissolved.
  6. Let the tea come to room temperature, then chill in the fridge for at least 1 hour. Alternatively, add ice cubes directly but note it may dilute the flavor.
  7. Juice 1 large lemon and slice another lemon for garnish.
  8. Serve the iced tea over a glass filled with ice cubes, add freshly squeezed lemon juice, and stir gently. Garnish with lemon slices.

Notes

Do not oversteep lavender to avoid bitterness. Stir honey into warm tea for better dissolution. Use fresh lemon juice for best flavor. Chill tea for at least 1 hour for optimal taste. Adjust honey and lemon to taste. For caffeine-free version, substitute black tea with rooibos or chamomile. Maple syrup or agave nectar can replace honey for a vegan option.
