These Quick Christmas Tree Brownie Cake Pops are the easiest holiday treat that looks like you spent hours. Made with boxed brownie mix, frosting, and green candy melts, they’re perfect for last-minute bake sales, cookie swaps, and classroom parties.

Ingredients

Scale
  • 1 box (18 oz) brownie mix (fudge or supreme variety)
  • Eggs, oil, and water (as called for by brownie mix, typically 2 eggs, 1/3 cup oil, 1/4 cup water)
  • 1/4 cup chocolate frosting (store-bought, such as Duncan Hines Creamy Chocolate)
  • 12 oz green candy melts (Wilton brand recommended)
  • 1 tablespoon coconut oil or vegetable shortening
  • Popsicle sticks or lollipop sticks (12-15, 6-inch size)
  • Holiday sprinkles (green, red, white, gold)
  • Small star sprinkles or yellow frosting (for tree toppers)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Line a 9×9-inch baking pan with parchment paper, leaving overhang on two sides.
  2. Mix brownie batter according to box directions (usually 2 eggs, 1/3 cup oil, 1/4 cup water). Pour into prepared pan and bake for 20-22 minutes, until slightly underbaked (center still a little gooey). Let cool completely in the pan, about 30 minutes.
  3. Lift cooled brownies out of pan using parchment. Place in a large bowl and crumble into fine crumbs (like wet sand) using hands or a fork.
  4. Add 1/4 cup chocolate frosting to crumbled brownies. Mix with fork or hands until dough-like consistency forms (should hold shape when squeezed). If too crumbly, add another tablespoon of frosting; if too sticky, add more brownie crumbs.
  5. Scoop about 2 tablespoons of mixture and roll into a ball, then shape into a cone (wider at bottom, slightly pointed at top, about 1.5 inches wide at base and 2 inches tall). Place on parchment-lined baking sheet. Repeat to make 12-15 trees.
  6. Gently push a popsicle stick into the bottom of each tree cone, about halfway through. If mixture cracks, pinch it back together around the stick.
  7. Refrigerate the tray of brownie trees for at least 30 minutes (up to 2 hours) until thoroughly chilled.
  8. About 5 minutes before dipping, place green candy melts and 1 tablespoon coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until smooth and thin (like warm honey). Do not overheat.
  9. Working with one chilled tree at a time, hold by the stick and fully submerge the brownie part in melted green coating. Lift out, let excess drip off, and gently tap stick on bowl edge to settle coating. Place upright in a Styrofoam block or cardboard box.
  10. While coating is still wet, sprinkle holiday sprinkles over the trees. If using star toppers, place one on top while coating is wet. If piping stars with yellow frosting, wait until coating is fully set (about 10 minutes), then pipe a small star on top.
  11. Let cake pops set at room temperature until coating is fully hardened, about 15-20 minutes.

Notes

Do not overbake brownies; slightly underbaked gives fudgy texture. Chilling the shaped trees is essential to prevent them from falling off sticks during dipping. Thin candy melts with coconut oil for smooth coating. Work in small batches, keeping remaining trees chilled. For best results, dip and decorate the day of serving.
