Quick Champagne Truffles: Easy 10-Minute Recipe

These quick champagne truffles are ready in just 10 minutes with only 4 simple ingredients. Perfect for last-minute celebrations, they combine rich chocolate and bubbly champagne for a fancy treat that always impresses.

  • 12 oz (340g) semi-sweet chocolate, finely chopped
  • 1/2 cup (120 ml) heavy cream
  • 1/4 cup (60 ml) champagne or sparkling wine (dry brut or prosecco)
  • 2 tablespoons (28g) unsalted butter, softened
  • For rolling (choose one or mix and match):
  • 1/4 cup (30g) unsweetened cocoa powder
  • 1/4 cup (30g) powdered sugar
  • 1/2 cup (60g) finely chopped pistachios or almonds
  • 1/2 cup (40g) shredded coconut, toasted
  • Rainbow sprinkles

Instructions

  1. Line an 8×8-inch baking dish or loaf pan with parchment paper, leaving some overhang on the sides.
  2. Finely chop the chocolate bars and place them in a medium microwave-safe bowl.
  3. In a small saucepan or microwave-safe measuring cup, combine the heavy cream and champagne. Heat until just simmering (small bubbles around the edge, but do not let it boil). If using the microwave, heat in 30-second bursts, stirring between each, until hot.
  4. Pour the hot cream mixture over the chopped chocolate. Let it sit undisturbed for 2-3 minutes.
  5. After resting, gently whisk the mixture in small circles starting from the center. Once it comes together, add the softened butter and whisk until the ganache is glossy and smooth (about 1 minute).
  6. Pour the ganache into the prepared pan and spread evenly. Refrigerate for at least 2 hours, or until firm (can be made the night before).
  7. Once the ganache is set, use a small cookie scoop or teaspoon to portion out the truffles. Roll each portion between your palms to form a ball. If hands get sticky, dust lightly with cocoa powder.
  8. Place your chosen coating in a shallow bowl. Roll each truffle until fully coated. For cocoa powder, gently shake off excess. For nuts or coconut, press lightly to help them stick.
  9. Place the finished truffles on a parchment-lined baking sheet and refrigerate for at least 30 minutes before serving.

Notes

Don’t skip the 2-minute rest after pouring the hot cream over the chocolate. Use a dry champagne or prosecco; sweet sparkling wines can make the truffles cloying. Let the champagne go slightly flat before using to avoid air bubbles in the ganache. For vegan version, substitute heavy cream with full-fat coconut cream and use vegan dark chocolate. Store in an airtight container in the refrigerator for up to 2 weeks. Freeze for up to 3 months.
