Ingredients

Scale
  • 1 cup (about 100g) fresh or frozen cranberries
  • 1/3 cup (65g) granulated sugar
  • 1/4 cup (60ml) orange juice
  • 1 teaspoon orange zest
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon (optional)
  • 1 wheel (8 ounces/225g) brie cheese, at room temperature
  • 1 sheet (about 250g) puff pastry, thawed
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Pinch of flaky sea salt (optional)
  • Crackers or sliced baguette, for serving
  • Apple slices or pear slices (optional, for serving)
  • Honey, for drizzling (optional)

Instructions

  1. Make the cranberry compote: In a small saucepan, combine cranberries, sugar, orange juice, orange zest, and cinnamon (if using). Cook over medium heat, stirring occasionally, until cranberries pop and mixture thickens, about 8-10 minutes. Remove from heat and stir in vanilla extract. Let cool slightly.
  2. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. Prepare the brie: Using a sharp knife, carefully slice off the top rind of the brie, leaving the sides intact. (If you prefer, you can leave the rind on entirely.)
  4. Wrap the brie: On a lightly floured surface, roll out puff pastry into a 10×10-inch square. Place brie in the center, cut side up. Spoon 2-3 tablespoons of cranberry compote on top of the brie. Gather pastry corners up and over the brie, pinching seams to seal. Flip over so seams are on the bottom and place on prepared baking sheet.
  5. Apply egg wash: Brush the entire pastry surface with the beaten egg. Sprinkle with a pinch of flaky sea salt, if desired. Optionally, score decorative lines on top without cutting through.
  6. Bake for 18-22 minutes, until pastry is puffed and golden brown. Let cool on baking sheet for 5 minutes.
  7. Transfer to a serving platter. Spoon remaining cranberry compote around the base or on top. Serve immediately with crackers, baguette slices, or apple wedges.

Notes

For best results, let brie sit at room temperature for 15-20 minutes before baking. Make the compote up to 3 days ahead and store in the fridge. If pastry edges brown too quickly, tent with foil for the last 5 minutes. Use a serrated knife to slice the baked brie cleanly.
