Quick 15-Minute Ground Beef Taco Soup

A fast, flavorful weeknight dinner that combines ground beef, beans, and taco spices in a rich broth. This easy soup requires minimal prep and delivers maximum comfort.

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes (do not drain)
  • 1 can (8 oz) tomato sauce
  • 2 cups beef broth (low-sodium)
  • 1 cup corn (frozen or canned)
  • 12 tbsp chipotle peppers in adobo, minced
  • 1 tbsp lime juice (freshly squeezed)
  • Salt and pepper to taste

Instructions

  1. Heat a large pot or Dutch oven over medium-high heat. Add the ground beef and break it up with a wooden spoon. Cook until no longer pink, then drain excess grease if desired.
  2. Add the diced onion to the beef and cook for 2 minutes until softened. Add the minced garlic and cook for 30 seconds, stirring constantly to prevent burning.
  3. Sprinkle the taco seasoning over the beef mixture and stir to coat. Cook for 30 seconds to toast the spices.
  4. Pour in the beef broth, diced tomatoes (with juice), tomato sauce, black beans, and kidney beans. Stir well, scraping the bottom of the pot to release browned bits.
  5. Add the corn and minced chipotle peppers. Bring the soup to a boil, then reduce heat to medium-low and simmer uncovered for 5 minutes.
  6. Remove from heat and stir in the lime juice. Taste and add salt and pepper if needed. Let sit for 2 minutes before serving.

Notes

For a vegetarian version, swap beef for extra beans and use vegetable broth. For a lower-carb option, skip the corn and kidney beans. Use low-sodium broth to control salt levels. The soup can be made in a slow cooker by browning beef first, then cooking on low for 4-6 hours.
