Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease and flour two 9-inch cake pans or line with parchment paper.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking soda, and salt. Whisk to combine.
  3. In a separate bowl, whisk buttermilk, vegetable oil, eggs, red food coloring, vanilla extract, and white vinegar until smooth.
  4. Slowly pour wet ingredients into dry ingredients, mixing gently until just combined. Avoid overmixing.
  5. Divide batter evenly between prepared pans. Tap pans gently to release air bubbles.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Cool cakes in pans for 10 minutes, then invert onto cooling racks and cool completely.
  8. For frosting, beat cream cheese and butter until fluffy. Gradually add powdered sugar, vanilla extract, and salt. Beat until smooth and spreadable. Chill if too soft.
  9. Place one cake layer on serving plate. Spread thick layer of frosting on top. Add second layer. Apply thin crumb coat and chill for 20 minutes.
