  • ยผ cup (50g) light brown sugar, packed (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • ยผ cup (56g) cold unsalted butter, cut into small cubes

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Line your muffin tin with paper liners.
  2. Make the cream cheese filling first. In a medium bowl, beat the softened cream cheese with ยผ cup sugar until smooth. Add the egg yolk and ยฝ teaspoon vanilla, then beat until completely combined. Set aside at room temperature.
  3. Prepare the streusel topping. In a small bowl, whisk together ยฝ cup flour, ยผ cup brown sugar, and 1 teaspoon cinnamon.
