  • 1/4 cup heavy cream, at room temperature (for caramel)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 9×13-inch baking dish with butter or non-stick spray.
  2. Make the apple filling: In a large bowl, toss the sliced apples with 1/4 cup granulated sugar, 1 tablespoon flour, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1 tablespoon lemon juice. Set aside.
  3. Make the oat crumble: In a separate bowl, whisk together 1 cup oats, 1/2 cup flour, 1/2 cup brown sugar, and 1/4 teaspoon salt. Add the cold, cubed butter. Use a pastry cutter or your fingertips to work the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized butter pieces remaining.
  4. Make the salted caramel sauce: In a medium saucepan over medium heat, melt 1/2 cup granulated sugar, stirring constantly with a whisk. It will clump at first, then melt into a golden amber liquid (about 5-7 minutes). Once it’s a deep amber color, remove from heat and immediately whisk in 3 tablespoons butter. Slowly pour in 1/4 cup heavy cream while whisking. Whisk until smooth. Stir in 1/2 teaspoon flaky salt and 1/2 teaspoon vanilla. Let cool slightly.
  5. Assemble the crisp: Spread the apple mixture evenly in the prepared baking dish. Pour about half of the salted caramel sauce over the apples. Sprinkle the oat crumble evenly over the top.
  6. Bake: Place the dish on a baking sheet. Bake for 40-45 minutes, until the topping is golden brown and the filling is bubbly around the edges. If the topping is browning too quickly, tent loosely with foil for the last 10 minutes.
  7. Finish and serve: Let the crisp cool on a wire rack for at least 15 minutes. Drizzle the remaining salted caramel sauce over the top just before serving. Add an extra pinch of flaky salt if desired.
