Instructions

  1. In a large mixing bowl, whisk together the all-purpose and semolina flours with the sea salt until evenly combined (about 2 minutes).
  2. Make a crater in the center of the flour mixture. Crack the eggs into this well, then add the olive oil.
  3. Using a fork, gently whisk the eggs and oil, gradually pulling flour from the edges into the liquid. Keep mixing until the dough starts to come together. If it feels dry, add water 1 teaspoon at a time (3-4 minutes).
  4. Transfer the shaggy dough to a lightly floured countertop. Knead with the heels of your hands, folding and pushing the dough for about 8-10 minutes until smooth, elastic, and slightly tacky but not sticky.

  6. Divide the rested dough into 2 portions. Lightly flour your surface and roll each piece thinly with a rolling pin to about 1/16 inch (1.5 mm) thickness. Alternatively, use a pasta machine starting on the widest setting and gradually roll thinner.
  7. Cut the pasta into desired shapes (fettuccine, tagliatelle, pappardelle) using a sharp knife or pasta cutter. Dust cut noodles lightly with flour to prevent sticking.
  8. Bring a large pot of salted water to a boil. Cook fresh pasta for 2-3 minutes until tender but al dente. Drain carefully and serve immediately with your favorite sauce.
