This creamy, comforting white chicken chili is made in the slow cooker with simple ingredients like chicken, white beans, green chiles, and a velvety cream cheese base. It’s the perfect cozy meal for busy weeknights or lazy Sundays.

Ingredients

Scale
  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • 2 (15-oz) cans white beans (Great Northern or cannellini), drained and rinsed
  • 4 cups (960ml) low-sodium chicken broth
  • 2 (4-oz) cans diced green chiles
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano (preferably Mexican)
  • 1 teaspoon mild chili powder
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • 8 oz (226g) Neufchatel cheese, softened
  • ½ cup (120ml) heavy cream
  • Juice of 1 lime
  • Optional garnish: fresh cilantro, shredded Monterey Jack cheese, diced avocado, tortilla chips, sour cream, sliced jalapeño

Instructions

  1. Prep the aromatics: Dice the onion and mince the garlic. Set aside.
  2. Build the base: In a 5-6 quart slow cooker, combine chicken breasts, diced onion, minced garlic, drained white beans, diced green chiles, cumin, oregano, chili powder, salt, and pepper. Pour chicken broth over everything and stir gently.
  3. Slow cook: Cover and cook on low for 7-8 hours or on high for 4 hours, until chicken is tender and shreds easily.
  4. Shred the chicken: Carefully remove chicken to a cutting board. Shred with two forks and return to the slow cooker.
  5. Create the creamy base: In a small bowl, whisk softened Neufchatel cheese with about ½ cup of hot broth from the slow cooker until smooth. Pour mixture back into the slow cooker and stir well.
  6. Add final touches: Stir in heavy cream and fresh lime juice. Taste and adjust seasoning. Let cook on low for another 10-15 minutes.
  7. Serve and garnish: Ladle into bowls and top with desired garnishes. Serve immediately.

Notes

For best texture, do not overcook the chicken. On low, 7-8 hours is ideal; on high, do not exceed 4 hours. Tempering the cream cheese with hot broth prevents lumps. Leftovers taste even better the next day. To freeze, cool completely and store in airtight containers for up to 3 months.
