  • 1 wheel (8 ounces / 225 grams) whole brie cheese, rind on
  • 3 tablespoons fig jam
  • 1/3 cup (35 grams) walnuts, roughly chopped and toasted
  • 2 tablespoons honey (preferably raw or wildflower)
  • 1 teaspoon fresh rosemary, finely chopped
  • Optional: crackers or sliced baguette for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Toast the chopped walnuts in a dry skillet over medium heat for 3-4 minutes, stirring frequently, until fragrant and lightly browned. Remove from heat and set aside.
  3. In a small bowl, combine the honey and finely chopped fresh rosemary. Stir well and set aside to let the flavors infuse.
  4. Place the brie wheel on an oven-safe baking dish or small cast-iron skillet. Using a sharp knife, gently score the top rind in a crisscross pattern about 1/8-inch deep.
  5. Carefully spoon the fig jam evenly over the top of the brie, covering the scored surface without spilling over the edges.
  6. Sprinkle the toasted walnuts evenly over the fig jam layer, pressing gently to encourage adherence.
  7. Bake in the preheated oven for 12-15 minutes, or until the brie is soft to the touch but not completely melted out.
  8. Remove the brie from the oven and immediately drizzle the rosemary honey mixture over the top.
  9. Serve warm with crackers or sliced baguette. Use a small knife or spreader to scoop out the gooey cheese topped with fig jam and walnuts.

Notes

Keep an eye on the brie while baking to avoid over-melting or browning. Toasting walnuts separately enhances flavor and crunch. Finely chop rosemary to avoid overpowering the honey. For vegan options, use plant-based brie and substitute honey with agave or maple syrup.
