Ingredients

Scale
  • 1 ยผ cups (160g) all-purpose flour
  • ยฝ cup (115g) unsalted butter, cold and cubed
  • 3 tablespoons granulated sugar
  • ยผ teaspoon salt
  • 34 tablespoons ice water
  • 1 cup (240ml) cream cheese, softened
  • โ…“ cup (40g) powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup (150g) fresh strawberries, hulled and chopped
  • 1 cup (140g) fresh blueberries
  • โ…“ cup (65g) granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)
  • Extra fresh strawberries and blueberries for the flag design

Instructions

  1. Make the crust (15-20 minutes prep + 30 minutes chilling): In a mixing bowl or food processor, combine 1 ยผ cups all-purpose flour, 3 tablespoons sugar, and ยผ teaspoon salt. Add cold, cubed butter and pulse or cut in until the mixture resembles coarse crumbs. Slowly add ice water, one tablespoon at a time, just until the dough comes together. Donโ€™t overwork it! Form the dough into a disk, wrap in plastic, and chill for at least 30 minutes.
  2. Preheat your oven to 375ยฐF (190ยฐC). Once chilled, roll out the dough on a lightly floured surface into a circle slightly larger than your tart pan. Carefully transfer it to the pan, pressing into the edges and trimming any excess. Prick the bottom with a fork to prevent bubbling.
  3. Blind bake the crust (20-25 minutes): Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, remove weights and parchment, then bake another 5-10 minutes until golden. Let cool completely.
  4. Prepare the filling (10 minutes): Beat 1 cup softened cream cheese with โ…“ cup powdered sugar and 1 teaspoon vanilla extract until smooth and fluffy. Spread evenly over cooled crust.
  5. Make the berry glaze (15 minutes): In a small saucepan, combine 1 cup chopped strawberries, 1 cup blueberries, โ…“ cup sugar, and 1 tablespoon lemon juice. Cook over medium heat until berries break down and mixture bubbles. Stir in cornstarch slurry and cook for another minute until thickened. Strain the glaze through a fine sieve to remove seeds, letting it cool slightly.
  6. Assemble the tart (10 minutes): Pour the glaze over the cream cheese filling, spreading gently to cover evenly. Arrange whole blueberries in the top-left corner for the stars, and slice strawberries into thin strips to form the stripes.
  7. Chill the tart for at least 1 hour before serving to let the glaze set and flavors meld.

Notes

Keep butter cold for a flaky crust. Chill dough to relax gluten and ease rolling. Blind bake crust to avoid sogginess. Use fresh berries for best glaze; frozen berries can be used if thawed and drained. Plan berry arrangement for the flag design beforehand. Prepare glaze just before assembly so it is warm but not hot when poured. Tent tart with foil if edges brown too quickly. Use a damp cloth to clean berry juice spills.
