Ingredients

Scale
  • 4 ounces prosciutto
  • 4 ounces salami (Genoa salami recommended)
  • 2 ounces soppressata (optional)
  • 4 ounces aged cheddar
  • 4 ounces brie
  • 2 ounces goat cheese
  • 1/2 cup mixed olives (kalamata and castelvetrano)
  • 1/4 cup marcona almonds (or regular almonds)
  • 1/4 cup dried apricots
  • 2 tablespoons honey
  • 1 small bunch of grapes (red or green)
  • 1 small baguette or box of crackers
  • Fresh rosemary or thyme sprigs (optional garnish)
  • Flaky sea salt (optional garnish)

Instructions

  1. Set out your cheeses first (5 minutes before you start). Unwrap the cheddar, brie, and goat cheese and let them sit at room temperature.
  2. Choose your board. Grab your cutting board or platter and give it a quick wipe. Place small bowls or ramekins on the board first—this helps you plan the layout.
  3. Fill the bowls. Spoon the olives into one bowl, the almonds into another, and drizzle the honey into a third small dish. If using dried apricots, you can put them in a bowl or scatter them on the board.
  4. Arrange the meats (2 minutes). Fold the prosciutto slices into loose ribbons or drape them in ruffled piles. Fold the salami slices in half, then in half again, and stand them up like little tents. Place the soppressata in a separate pile.
  5. Place the cheeses (2 minutes). Cut the aged cheddar into thin slices or small cubes and arrange them in a row or fan. Place the whole wedge of brie on the board. Dollop the goat cheese in a small pile or shape it into a little round.
  6. Add the accompaniments (2 minutes). Scatter the grapes in small clusters around the board. Tuck the dried apricots between the cheeses and meats. If using fresh herbs, lay a few sprigs along the edges for color.
  7. Prepare the bread or crackers. Slice the baguette into thin rounds and pile them on one side of the board, or arrange your crackers in a neat stack.
  8. Final touches. Drizzle a little honey over the brie and goat cheese. Sprinkle a pinch of flaky sea salt on the goat cheese if using. Fill in any empty spots with extra grapes or crackers.
  9. Serve immediately. Bring the board to the table with two small plates, napkins, and maybe a couple of wine glasses.

Notes

Let cheeses sit at room temperature for 20 minutes before serving for best flavor. Don’t overcrowd the board; leave space between items. For a vegetarian version, skip the meats and double up on cheeses and accompaniments. Store leftovers: wrap cheeses in wax paper, meats in an airtight container, and eat grapes within a day or two.
