  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (113g) unsalted butter, melted and slightly cooled
  • 3/4 cup (150g) packed brown sugar
  • 1/4 cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup (120ml) sour cream
  • 1 teaspoon vanilla extract
  • For the Brown Sugar Streusel:
  • 1/4 cup (50g) packed brown sugar
  • 2 tablespoons (16g) all-purpose flour
  • 2 tablespoons (28g) cold unsalted butter, cut into small cubes
  • 1/4 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a small bowl, combine the brown sugar, flour, and cinnamon for the streusel. Cut in the cold butter using a pastry cutter or fingers until coarse crumbs form. Chill in the fridge.
  4. In a separate bowl, whisk together the brown sugar, granulated sugar, melted butter, eggs, sour cream, and vanilla extract until smooth.
  5. Stir in the mashed bananas into the wet mixture.
  6. Gently fold the dry ingredients into the wet mixture with a spatula until just combined. Avoid overmixing.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Sprinkle the chilled brown sugar streusel evenly over the batter.
  9. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil after 45 minutes if the streusel browns too quickly.
  10. Cool the bread in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

Use ripe, speckled bananas for best sweetness and moisture. Avoid overmixing the batter to keep the bread tender. Keep butter cold for the streusel topping to achieve a crumbly texture. Tent with foil if streusel browns too fast. You can substitute Greek yogurt for sour cream or almond flour for gluten-free. Adding nuts or chocolate chips are great variations.
