Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and prepare a 9×13-inch baking pan by greasing or lining with parchment paper.
  2. Shred about 2 medium zucchinis to get 2 cups. Place shredded zucchini in a clean kitchen towel and squeeze out excess moisture, leaving some moisture for moistness.
  3. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and ground cinnamon. Set aside.
  4. In a large bowl, beat softened butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.
  5. Beat in eggs one at a time, then stir in vanilla extract until combined.
  6. Gradually add dry ingredients to wet ingredients, mixing gently on low speed or folding with a spatula until just combined. Avoid overmixing.
  7. Carefully fold in shredded zucchini and chocolate chips.
