A lighter, crustless pecan pie cobbler made with maple syrup and coconut oil, topped with a soft cake-like layer and served with vanilla ice cream. It’s a happy accident turned into a beloved dessert.

Ingredients

Scale
  • 1 ½ cups (180g) pecans, roughly chopped
  • ½ cup (120ml) pure maple syrup
  • 3 tablespoons (45ml) coconut oil, melted
  • 1 large egg, at room temperature
  • 1 teaspoon (5ml) pure vanilla extract
  • ¼ teaspoon salt
  • ¾ cup (95g) all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (120ml) milk (2% or any milk)
  • 2 tablespoons (30ml) coconut oil, melted
  • 2 tablespoons (30ml) pure maple syrup
  • Vanilla ice cream, for serving

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish with coconut oil or butter.
  2. Spread chopped pecans on a baking sheet and toast for 5-7 minutes until fragrant. Let cool.
  3. In a medium bowl, whisk together ½ cup maple syrup, 3 tablespoons melted coconut oil, egg, vanilla extract, and ¼ teaspoon salt until smooth. Stir in toasted pecans. Pour into prepared dish.
  4. In another bowl, whisk together flour, baking powder, and ¼ teaspoon salt. Add milk, 2 tablespoons melted coconut oil, and 2 tablespoons maple syrup. Stir until just combined (lumps are fine).
  5. Drop spoonfuls of batter over the pecan filling. Gently spread with a spatula if desired, but do not press into filling.
  6. Bake for 30-35 minutes until topping is golden brown and a toothpick inserted into topping comes out clean. Filling will be bubbly around edges.
  7. Cool for 10 minutes to allow filling to set.
  8. Serve warm with a generous scoop of vanilla ice cream.

Notes

Toast pecans for best flavor. Do not overmix batter. Let cobbler rest 10 minutes before serving. If topping browns too quickly, tent with foil. Filling thickens as it cools. Can be made ahead and reheated.
