A simple homemade coffee syrup made with vanilla and cinnamon that transforms ordinary coffee into a cozy treat. Quick to make with just four ingredients, this syrup is perfect for morning rituals and makes a thoughtful gift.

Ingredients

Scale
  • 1 cup water (filtered if possible)
  • 1 cup granulated sugar (or organic cane sugar)
  • 2 cinnamon sticks (whole, not ground)
  • 2 teaspoons pure vanilla extract (not imitation)

Instructions

  1. Combine water and sugar in a small saucepan. Stir briefly to start dissolving the sugar.
  2. Add the cinnamon sticks. Break them in half if too long for the pan; gently crack them to release oils.
  3. Bring to a gentle simmer over medium heat (about 3-4 minutes). Stir occasionally until sugar dissolves.
  4. Simmer gently for 10 minutes without stirring. The syrup will deepen slightly to a pale amber.
  5. Remove from heat. Stir in vanilla extract.
  6. Let cool in the pan for about 5 minutes.
  7. Strain through a fine-mesh strainer into a clean glass jar or bottle. Discard cinnamon sticks.
  8. Cool completely to room temperature (about 30-40 minutes) before sealing.
  9. Store in the refrigerator. Syrup will thicken slightly as it chills.

Notes

Use whole cinnamon sticks, not ground, to avoid cloudy, gritty syrup. Add vanilla after removing from heat to preserve flavor. For a thicker syrup, use 1.25 cups sugar to 1 cup water. Brush down sugar crystals from pan sides with a wet pastry brush to prevent crystallization. Syrup keeps up to 3 weeks in the refrigerator. Can be frozen in ice cube trays for up to 3 months. Flavor improves after a day or two in the fridge.
