  • 1/2 cup (60g) mini marshmallows (optional)
  • 2 tablespoons (28g) butter
  • A pinch of salt

Instructions

  1. Pop the popcorn: Place 1/2 cup popcorn kernels in a large pot with a lid over medium heat. Add 2 tablespoons butter and a pinch of salt. Cover and shake occasionally to prevent burning. When popping slows to 2-3 seconds between pops, remove from heat. Transfer popped corn to a large mixing bowl, discarding unpopped kernels.
  2. Melt the white chocolate: In a microwave-safe bowl, microwave 1 cup white chocolate chips in 30-second bursts, stirring well each time until smooth. Alternatively, melt over a double boiler. Avoid overheating.
  3. Combine popcorn and chocolate: Pour melted white chocolate over the popcorn. Using a spatula or wooden spoon, gently fold to coat evenly without drowning the kernels.
  4. Add red and blue accents: While chocolate is warm, sprinkle red candy melts or sprinkles and blue candy melts or sprinkles evenly over the popcorn. Toss lightly to distribute colors.
  5. Add mini marshmallows (optional): Toss in 1/2 cup mini marshmallows for extra chewiness.
  6. Spread on baking sheet to set: Line a baking sheet with parchment paper or silicone mat. Spread popcorn mixture in an even layer. Let cool at room temperature for 10-15 minutes until chocolate hardens and popcorn is crisp.
  7. Break into clusters and serve immediately or store for later.
