Ingredients

Scale
  • 1 lb salmon fillet, skin removed and cut into 1-inch cubes
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • Olive oil spray
  • 3 tablespoons honey
  • 1–2 tablespoons sriracha
  • 1 tablespoon soy sauce (low-sodium)
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon sesame oil (optional)

Instructions

  1. Pat the salmon fillet dry with paper towels and cut into 1-inch cubes.
  2. In a shallow bowl, whisk the egg until smooth. In another shallow bowl, combine panko, Parmesan, garlic powder, onion powder, salt, and pepper.
  3. Dip each salmon cube into the egg wash, letting excess drip off, then roll in the panko mixture, pressing gently to adhere. Place on a plate.
  4. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  5. Lightly spray the air fryer basket with olive oil. Arrange salmon bites in a single layer without touching. Spray tops with oil.
  6. Cook at 400°F for 6 minutes. Flip each piece, spray again, and cook for another 3-4 minutes until golden and crispy (internal temperature 145°F).
  7. While salmon cooks, combine honey, sriracha, soy sauce, rice vinegar, and sesame oil in a small saucepan over low heat. Whisk until warm and smooth (about 2 minutes). Alternatively, microwave in 15-second bursts.
  8. Transfer cooked salmon bites to a bowl, pour warm glaze over them, and toss gently with tongs to coat evenly.
  9. Serve immediately, garnished with sliced green onions, sesame seeds, or lime juice if desired.

Notes

Pat salmon dry thoroughly to prevent coating from falling off. Use panko for best crispiness. Don’t overcrowd the air fryer. For picky eaters, reserve some unglazed bites or use only honey and soy sauce. Leftovers can be stored in the fridge for up to 3 days; reheat in air fryer at 350°F for 3-4 minutes.
