Creamy, spiced overnight oats made with simple pantry staples like rolled oats, Greek yogurt, and fresh apples. This easy meal prep recipe is ready in minutes and keeps for days.

Ingredients

Scale
  • 1 cup Old-Fashioned Rolled Oats
  • 1 tablespoon Chia Seeds
  • 1 cup Milk (dairy, almond, oat, or soy)
  • 2 tablespoons Plain Greek Yogurt
  • 1 tablespoon Pure Maple Syrup
  • 1/2 teaspoon Ground Cinnamon
  • 1 medium Apple (Honeycrisp, Fuji, or Gala), diced
  • 1 teaspoon Vanilla Extract

Instructions

  1. Dice the apple into small, bite-sized cubes and set aside.
  2. In a mason jar, combine the rolled oats and chia seeds. Stir to distribute evenly.
  3. Pour in the milk, Greek yogurt, maple syrup, cinnamon, and vanilla extract.
  4. Stir the mixture vigorously to ensure no dry oats are stuck to the bottom and the yogurt is fully incorporated.
  5. Gently fold the diced apples into the oat mixture.
  6. Seal the jar tightly and refrigerate for at least 4 hours, preferably overnight.
  7. Before eating, stir the oats well. Add a splash of milk if the texture is too thick, and top with extra cinnamon if desired.

Notes

For best texture, use old-fashioned rolled oats rather than instant or steel-cut. If you prefer warm oats, microwave for 2 minutes after soaking. Store in the refrigerator for up to 5 days. For a vegan version, use plant-based milk and coconut yogurt.
