Fresh Red White and Blue Strawberry Blueberry Watermelon Popsicles

These vibrant and refreshing popsicles layer fresh strawberries, blueberries, and watermelon for a healthy, colorful summer treat that’s easy to make and perfect for celebrations.

Ingredients

  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries, fresh or frozen
  • 2 cups seedless watermelon, chopped into chunks
  • 1 tablespoon lemon juice
  • 1 to 2 tablespoons honey or maple syrup (optional)
  • 1/4 cup water

Instructions

  1. Rinse and hull about 1 cup of fresh strawberries. Slice thinly and place in a bowl. Add 1 teaspoon lemon juice and 1 tablespoon honey or maple syrup if using. Mix gently and set aside to macerate for 10 minutes.
  2. Rinse 1 cup of blueberries. Place in a blender with 1 tablespoon water and 1 teaspoon lemon juice. Blend until smooth but still slightly chunky. Taste and add honey if needed. Pour into a separate bowl.
  3. Chop 2 cups of seedless watermelon into chunks. Blend with 1 tablespoon water until smooth. Strain through a fine mesh sieve if desired. Add 1 teaspoon lemon juice.
  4. Spoon or pour the strawberry slices and juice into the bottom of popsicle molds, filling about one-third. Freeze for 45 minutes to 1 hour until partially set.
  5. Add the blueberry puree layer on top of the strawberry layer, filling another third of the mold. Freeze again for 45 minutes to 1 hour.
  6. Pour the watermelon puree as the top layer, filling to the top of the mold.
  7. Insert popsicle sticks if molds don’t have built-in holders. Freeze for at least 4 hours or overnight until solid.
  8. To serve, run warm water over the molds briefly to loosen popsicles, then gently pull them out. Enjoy immediately or store in a freezer bag for up to 2 weeks.

Notes

Freeze each layer fully before adding the next to keep distinct color bands. Adjust sweetness to taste by adding honey or maple syrup as needed. Store popsicles in an airtight container to prevent freezer burn. Run warm water over molds briefly to loosen popsicles before removing.
