A quick and refreshing summer drink combining ripe peaches, fresh basil, and sparkling water for a light, sweet, and herbal agua fresca.

Ingredients

Scale
  • 3 large ripe peaches, pitted and sliced
  • 1012 fresh basil leaves, gently torn
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • 12 tablespoons honey or agave syrup (optional)
  • 4 cups chilled sparkling water
  • Ice cubes as needed for serving

Instructions

  1. Wash, pit, and slice 3 large ripe peaches. No need to peel unless preferred. (5 minutes)
  2. Place 10-12 fresh basil leaves in a blender or food processor. Use a muddler or wooden spoon to gently bruise the leaves to release oils. (2 minutes)
  3. Add sliced peaches, 2 tablespoons fresh lemon juice, and 1-2 tablespoons honey or agave syrup to the blender with basil. Blend until smooth and slightly frothy. (2-3 minutes)
  4. Pour the blended mixture through a fine mesh strainer into a pitcher to remove skins and basil bits. Press the pulp to extract as much juice as possible. (5 minutes)
  5. Gently stir in 4 cups (about 32 fl oz) of chilled sparkling water to the strained juice. Taste and adjust sweetness or lemon if needed. (1 minute)
  6. Fill glasses with ice cubes and pour the agua fresca over. Garnish with a fresh basil leaf or a thin peach slice. (2 minutes)

Notes

For a stronger basil flavor, add extra leaves or muddle more in the pitcher before adding sparkling water. For a non-fizzy version, replace sparkling water with cold still water or coconut water. Use mint or Thai basil as alternatives to fresh basil. Store peach-basil puree without sparkling water in the fridge up to 2 days; add sparkling water before serving.
