A quick and easy fresh summer salad packed with hormone-balancing ingredients to support PCOS and thyroid health, featuring leafy greens, berries, avocado, and a light lemon-olive oil dressing.

Ingredients

  • 4 cups leafy greens (spinach, kale, arugula), about 120g
  • 1 medium cucumber, thinly sliced (about 7 oz)
  • A handful (about 10g) fresh herbs (mint, basil, cilantro)
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 lemon (about 2 tablespoons)
  • Pinch of sea salt
  • Freshly ground black pepper to taste
  • 1 teaspoon Dijon mustard (optional)
  • 1 ripe avocado, diced
  • 2 tablespoons chia seeds (about 20g)
  • A handful (about 1 oz) chopped almonds or walnuts (optional)
  • Dollop of Greek yogurt or dairy-free coconut yogurt (optional)

Instructions

  1. Rinse 4 cups of leafy greens thoroughly and spin dry.
  2. Thinly slice one medium cucumber and chop a handful of fresh herbs.
  3. In a large mixing bowl, combine the greens, cucumber slices, and herbs. Toss gently to mix.
  4. In a small bowl, whisk together 3 tablespoons of extra virgin olive oil, juice of one lemon, a pinch of sea salt, freshly ground black pepper, and Dijon mustard if using.
  5. Drizzle the dressing over the salad and toss gently to coat all leaves.
  6. Dice one ripe avocado and add to the salad.
  7. Sprinkle 2 tablespoons of chia seeds and chopped nuts if using.
  8. Serve with a dollop of Greek or coconut yogurt on the side if desired.
  9. Serve immediately or refrigerate for up to 30 minutes to let flavors meld, adding avocado just before serving if chilled.

Notes

Add avocado just before serving if chilling to prevent browning. Tear herbs by hand to preserve oils and fragrance. Prepare ingredients the night before but keep avocado and dressing separate. Eat salad within 24 hours for best freshness and nutrient retention. Optional protein additions include grilled chicken or baked salmon.
