  • 1 medium seedless watermelon, cut into 1-inch thick steaks
  • 2 tablespoons olive oil
  • 4 ounces feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 1 tablespoon lime juice, freshly squeezed (optional)
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Slice the watermelon into 1-inch thick steaks (about 4 to 5 slices from a medium watermelon). Trim the rind slightly if desired.
  2. Preheat the grill or grill pan to medium-high heat (around 400°F).
  3. Brush both sides of each watermelon steak lightly with olive oil.
  4. Place the watermelon steaks on the grill and cook for 2-3 minutes per side until grill marks and slight caramelization appear, but the watermelon remains firm.
  5. While grilling, toss the crumbled feta with chopped mint, lime juice, sea salt, and black pepper in a mixing bowl.
  6. Transfer the grilled watermelon steaks to a serving platter and spoon the feta and mint mixture evenly over each steak. Serve immediately.

Notes

Do not overcook the watermelon to avoid mushiness. Use thick 1-inch slices to keep the steaks intact. Brush grill grates with oil to prevent sticking. Add feta and mint topping just before serving for freshness. For a dairy-free option, substitute feta with vegan cheese or toasted nuts. Variations include adding chili flakes for heat or swapping mint for basil or cilantro.
