Fresh Frozen Yogurt Bark with Berries

A quick, easy, and light frozen snack combining creamy Greek yogurt with mixed berries and a touch of natural sweetness. Perfect for a refreshing treat or guilt-free dessert.

  • 2 cups (475 ml) plain Greek yogurt
  • 2 tablespoons (30 ml) honey or maple syrup
  • 1 teaspoon (5 ml) vanilla extract (optional)
  • 1 cup (150 g) mixed berries (fresh or frozen blueberries, raspberries, strawberries, or blackberries)
  • ¼ cup (30 g) chopped nuts (optional; almonds, pistachios, or walnuts)
  • 2 tablespoons (15 g) shredded coconut (optional)

Instructions

  1. In a medium mixing bowl, combine 2 cups (475 ml) of plain Greek yogurt with 2 tablespoons (30 ml) of honey or maple syrup and 1 teaspoon (5 ml) of vanilla extract, if using. Stir until smooth and well blended, about 2 minutes.
  2. Line a baking sheet (approximately 9×13 inches / 23×33 cm) with parchment paper or a silicone baking mat.
  3. Pour the yogurt mixture onto the lined tray and spread it evenly with a spatula or the back of a spoon to about ¼ inch (6 mm) thickness. This usually takes about 5 minutes.
  4. Scatter 1 cup (150 g) of mixed berries evenly over the yogurt. Press them in gently so they stick. Sprinkle chopped nuts and shredded coconut if using.
  5. Place the tray flat in your freezer and freeze for at least 3 hours or until completely firm. For a softer bark, freeze for 2 hours.
  6. Once frozen solid, lift the bark out of the tray using the parchment paper edges. Break or cut into irregular pieces with your hands or a knife.
  7. Store leftover bark in an airtight container or freezer bag in the freezer for up to 2 weeks.

Notes

Use Greek yogurt for best texture; regular yogurt may create icy crystals. Strain yogurt if too runny for thicker bark. Freeze on a flat, level surface. Store in airtight container to prevent freezer burn. Optional toppings include nuts, shredded coconut, cinnamon, or chocolate chips. Dairy-free versions can use coconut or almond milk yogurt.
