A quick and easy homemade vinaigrette combining apple cider vinegar, balsamic vinegar, Dijon mustard, and maple syrup for a tangy, sweet, and savory dressing perfect for salads and marinades.

  • 3 tablespoons apple cider vinegar
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon pure maple syrup
  • 1/4 cup (60 ml) extra virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Pour 3 tablespoons (45 ml) of apple cider vinegar and 2 tablespoons (30 ml) of balsamic vinegar into your mixing bowl.
  2. Add 1 tablespoon (15 ml) of Dijon mustard and whisk gently but thoroughly to combine.
  3. Drizzle in 1 tablespoon (15 ml) of pure maple syrup and stir.
  4. Sprinkle 1/2 teaspoon (3 grams) of sea salt and 1/4 teaspoon (0.5 grams) of freshly ground black pepper.
  5. While whisking continuously, slowly pour in 1/4 cup (60 ml) of extra virgin olive oil to create a smooth emulsion.
  6. Taste and adjust by adding more maple syrup if too sharp or a teaspoon of warm water if too thick.
  7. Transfer to a glass jar with a lid to store in the refrigerator or serve immediately over salad.

Notes

Whisk slowly while adding oil to avoid breaking the dressing. Use room temperature ingredients for best emulsification. Shake or whisk before use if separated. Stores well up to one week in the refrigerator.
