  • 1 cup (240ml) heavy whipping cream, chilled
  • 2 tablespoons powdered sugar

Instructions

  1. Mix Dry Ingredients: In a large bowl, sift together flour, baking powder, salt, and granulated sugar. (About 5 minutes)
  2. Combine Wet Ingredients: In a separate bowl, whisk milk, eggs, melted butter, and vanilla extract until smooth. (3 minutes)
  3. Make the Batter: Gradually pour wet ingredients into dry mix, stirring gently with a spatula until just combined. Lumps are okay. (2 minutes)
  4. Fold in Berries: Carefully fold in fresh or frozen berries without thawing if frozen. (1 minute)
  5. Preheat the Pan: Heat a non-stick skillet or griddle over medium heat and lightly butter it. Test readiness by sprinkling water drops. (5 minutes)
  6. Cook Pancakes: Pour about ¼ cup batter per pancake onto skillet. Cook until bubbles form and edges set, about 2-3 minutes. Flip and cook another 2 minutes until golden and cooked through. (15 minutes total)
  7. Whip the Cream: While pancakes cook, beat chilled heavy cream until soft peaks form. Add powdered sugar and whip until stiff peaks form. (5-7 minutes)
