  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 can (15 oz / 425 g) black-eyed peas, drained and rinsed
  • 1 cup (150 g) fresh or frozen corn kernels
  • 1 red bell pepper, diced
  • 1/2 small red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup (15 g) fresh cilantro, chopped (optional)
  • 12 chipotle peppers in adobo sauce, minced
  • Juice of 1 lime (about 2 tablespoons / 30 ml)
  • 2 tablespoons (30 ml) extra virgin olive oil
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon ground cumin
  • 1/2 cup (120 g) sour cream or Greek yogurt
  • Juice of 1 lime (about 2 tablespoons / 30 ml)
  • 1 teaspoon honey or agave syrup
  • Pinch of salt
  • Optional: 1 small garlic clove, finely minced

Instructions

  1. Rinse and drain black beans and black-eyed peas thoroughly.
  2. Dice the red bell pepper into small, even pieces.
  3. Mince the jalapeño carefully, removing seeds if less heat is desired.
  4. In a large mixing bowl, combine black beans, black-eyed peas, corn, red bell pepper, red onion, jalapeño, and cilantro. Stir gently to mix without mashing the beans.
  5. Mince 1-2 chipotle peppers in adobo sauce finely. Add to the bowl along with ground cumin, salt, and pepper.
  6. Squeeze in the juice of one lime and drizzle with olive oil. Toss everything carefully to coat evenly. Taste and adjust seasoning as needed.
  7. In a small bowl, whisk together sour cream (or Greek yogurt), lime juice, honey, salt, and garlic if using until smooth and creamy. Add a teaspoon of water if too thick.
  8. Drizzle the creamy lime crema over the cowboy caviar just before serving or serve on the side for dipping.
  9. Garnish with extra cilantro or a lime wedge if desired.

Notes

Rinse beans well to keep texture light. Use gloves when handling chipotle peppers if sensitive. Prepare crema while beans and veggies drain to save time. Add lime juice and olive oil just before serving if making ahead to keep veggies crisp. Store crema separately and add fresh before serving. For dairy-free, substitute sour cream with coconut yogurt and honey with agave syrup.
