  • 1 pound (450g) large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • ½ cup (120ml) dry white wine (Sauvignon Blanc or Pinot Grigio recommended)
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Rinse 1 pound (450g) of large shrimp under cold water and pat dry thoroughly with paper towels.
  2. Lightly season the shrimp with salt and pepper on both sides. Set aside.
  3. Place a heavy skillet or cast iron pan over medium-high heat. Add 2 tablespoons of unsalted butter and let it melt and start to bubble, but don’t let it brown (about 1-2 minutes).
  4. Add shrimp in a single layer. Cook undisturbed for about 2 minutes, until the edges start to turn pink and they release easily from the pan.
  5. Turn shrimp over using tongs and cook the other side for another 1-2 minutes until opaque and slightly golden but not overcooked.
  6. Push shrimp to one side and add minced garlic (4 cloves) to the empty side of the pan along with 1 tablespoon of butter. Stir gently, letting garlic soften but not burn (about 30 seconds).
  7. Carefully add ½ cup (120ml) of dry white wine to the pan. Use a wooden spoon to scrape up any browned bits from the bottom.
  8. Let the wine reduce by half, about 3-4 minutes, stirring occasionally until the sauce thickens slightly and smells fragrant.
  9. Stir in 1 tablespoon freshly squeezed lemon juice and 2 tablespoons chopped fresh parsley. Add a pinch of red pepper flakes if desired.
  10. Taste and adjust seasoning with salt and pepper. Remove from heat and serve immediately, spooning the garlic butter wine sauce over the shrimp.

Notes

Dry shrimp thoroughly before cooking to ensure a good sear. Avoid overcrowding the pan; cook in batches if necessary. Do not overcook shrimp to keep them tender. Use moderate heat when cooking garlic to prevent burning. Substitute white wine with chicken or seafood broth for a non-alcoholic version. Butter can be replaced with ghee or olive oil for dairy-free options.
