A light, elegant, and shareable dessert featuring fresh strawberries macerated with sugar and lemon juice, layered with fluffy whipped cream infused with vanilla bean paste. Perfect for quick gatherings and crowd-pleasing occasions.

Ingredients

Scale
  • 1 cup (240 ml) heavy whipping cream (organic preferred)
  • 2 tablespoons (15 g) powdered sugar (adjust to taste)
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 2 cups (300 g) fresh strawberries, hulled and halved or quartered
  • 1 tablespoon (12 g) granulated sugar
  • 1 teaspoon fresh lemon juice
  • Optional garnishes: fresh mint leaves, toasted almond slices or crushed pistachios

Instructions

  1. Prep the Strawberries (10 minutes): In a small bowl, combine hulled and sliced strawberries with granulated sugar and fresh lemon juice. Toss gently to coat and let sit at room temperature for about 10 minutes to macerate.
  2. Whip the Cream (5-7 minutes): Pour heavy whipping cream into a medium mixing bowl. Add powdered sugar and vanilla bean paste. Using a hand or stand mixer on medium-high speed, whip until soft peaks form.
  3. Fold the Cream (1-2 minutes): Gently fold the whipped cream with a spatula to ensure it is smooth and airy.
  4. Assemble the Dessert (5 minutes): In serving bowls or a trifle dish, layer macerated strawberries and syrup, then add a generous dollop of whipped cream. Repeat layers, finishing with a swirl of cream on top.
  5. Garnish and Chill (Optional): Sprinkle fresh mint leaves or toasted nuts on top if desired. Chill in the fridge for 15-20 minutes or serve immediately.

Notes

Use cold cream and chilled bowls for best whipping results. Macerate strawberries to intensify flavor and soften berries without losing shape. Stop whipping cream at soft peaks to avoid graininess. Handle whipped cream gently when folding and layering. If strawberries are watery, drain excess syrup before layering. Dairy-free option: substitute heavy cream with chilled coconut cream. Low-sugar option: replace sugars with maple syrup or agave nectar.
