A fun and festive charcuterie board shaped like a turkey, perfect for Thanksgiving appetizers. Quick to assemble with simple ingredients, it doubles as a centerpiece and crowd-pleaser.

Ingredients

Scale
  • 8–10 slices salami or prosciutto
  • 8–10 slices sharp cheddar cheese
  • 6–8 slices gouda or edam
  • 1 small wheel brie or camembert
  • 4–6 slices pepper jack cheese (optional)
  • 1 red bell pepper (cut into a small triangle for wattle)
  • 1 small piece yellow bell pepper or carrot (cut into a tiny triangle for beak)
  • 2 black olives or raisins (for eyes)
  • 20–30 crackers (mix of shapes and sizes)
  • 1 cup red seedless grapes
  • 1/2 cup dried cranberries or cherries
  • 1/2 cup roasted almonds or pecans
  • A few small bunches fresh rosemary sprigs
  • Small bowl fig jam or honey (optional)
  • 1/2 cup olives (optional)
  • 1 apple, sliced thin (optional, tossed with lemon juice)

Instructions

  1. Visualize the turkey shape on your board: body in lower center, tail feathers fanning out behind, head at front.
  2. Create the tail feathers with cheese triangles: arrange cheddar triangles in a fan shape, points outward, wide ends overlapping. Add gouda slices slightly in front, then pepper jack if using.
  3. Build the turkey body: place brie wheel in center, just in front of cheese feathers. Arrange salami slices around brie in a slight overlapping pattern, folding some for texture.
  4. Add the turkey head and face: arrange a small cluster of crackers or a cheese slice for the head. Place two olive eyes, yellow bell pepper beak (pointing down), and red bell pepper wattle below beak.
  5. Create the turkey legs: place two small bunches of rosemary sprigs at the bottom, extending downward from the body.
  6. Fill in gaps with crackers, fruit, and nuts: scatter crackers, grapes, dried cranberries, and almonds. Add small bowls of fig jam or honey if using.
  7. Add finishing touches: tuck extra rosemary sprigs around the board. Roll extra salami into rosettes and place near body. Adjust for color and texture balance.
  8. Serve immediately or refrigerate: cover loosely with plastic wrap and refrigerate up to 4 hours. Let sit at room temperature 20 minutes before serving.

Notes

For perfect triangle feathers, stack 2-3 cheese slices and cut at once. Fold salami into quarters or roll prosciutto into roses for texture. Keep area around turkey head clear so face is visible. Assemble no more than 4 hours before serving. Use sliced cheese from deli, not pre-shredded.
