These Easy Sheet Pan Ground Beef Fajitas are a quick and delicious weeknight dinner, featuring smoky, charred peppers and onions with perfectly browned ground beef, all roasted on one pan for minimal cleanup.

  • 1 lb ground beef (80/20 preferred)
  • 2 large bell peppers (mix of colors), sliced into thin strips
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1 lime
  • 8 small flour or corn tortillas, warmed
  • 1/2 cup sour cream (or Greek yogurt)
  • 1/2 cup fresh salsa
  • 1 avocado, sliced
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or aluminum foil.
  2. Slice the bell peppers into thin strips (about 1/4-inch wide) and the onion into thin half-moons.
  3. In a small bowl, mix together chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  4. Place the ground beef in the center of the prepared baking sheet. Arrange the sliced peppers and onions around the beef. Drizzle olive oil over the vegetables, then sprinkle the spice mixture evenly over everything. Toss the vegetables to coat, leaving the beef in a few large chunks.
  5. Roast for 15 minutes.
  6. Remove the pan from the oven. Use a spatula to break the ground beef into smaller crumbles and stir everything together.
  7. Return to the oven and roast for another 10-15 minutes, until the beef is fully cooked and the peppers and onions are tender with charred edges.
  8. Remove from the oven and squeeze the juice of one lime over the mixture. Stir to combine.
  9. Warm the tortillas in a dry skillet over medium heat for about 30 seconds per side, or wrap in a damp paper towel and microwave for 20-30 seconds.
  10. Spoon the fajita mixture onto warm tortillas. Top with sour cream, salsa, sliced avocado, and fresh cilantro. Serve with lime wedges.

Notes

For extra crispy edges on the beef, spread it out in a thin, even layer on the pan before the second roasting round. Let the fajita mixture rest for 2-3 minutes before serving to allow juices to redistribute. If using frozen peppers and onions, increase the first roasting time by about 5 minutes.
