Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the wet ingredients: 1 cup pumpkin puree, 1 cup milk, 2 large eggs, 1/3 cup maple syrup, 1/4 cup applesauce, 2 tablespoons melted coconut oil, and 1 teaspoon vanilla extract until smooth.
  3. In a medium mixing bowl, combine the dry ingredients: 2 cups rolled oats, 2 teaspoons pumpkin pie spice, 1 teaspoon cinnamon, 1 teaspoon baking powder, and 1/4 teaspoon salt. Stir with a fork to distribute the spices.
