Ingredients

Scale
  • 1 cup egg whites (about 8 large egg whites)
  • 2 large whole eggs
  • ½ cup cottage cheese (small curd, full fat or low fat)
  • ½ cup shredded cheese (cheddar, mozzarella, or Mexican blend)
  • ½ cup bell pepper, finely diced (any color)
  • 1 cup fresh spinach, roughly chopped
  • ¼ cup onion, finely diced
  • ½ cup cooked meat, diced (optional, such as turkey sausage, ham, or bacon)
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin generously with cooking spray or line with silicone liners.
  2. Dice bell pepper and onion into small, even pieces (pea-sized). Roughly chop spinach. If using cooked meat, dice into similar-sized pieces.
  3. Heat a small non-stick skillet over medium heat with a splash of olive oil. Sauté onion and bell pepper for 2-3 minutes until softened. Add spinach and cook for 30 seconds until wilted. Set aside to cool slightly.
  4. In a medium mixing bowl, combine egg whites, whole eggs, and cottage cheese. Whisk vigorously until cottage cheese is mostly broken up and mixture is smooth. For a smoother texture, blend in a blender for 10 seconds.
  5. Add salt, pepper, garlic powder, and onion powder to the egg mixture. Whisk to combine.
  6. Fold in sautéed vegetables, shredded cheese, and any cooked meat until evenly distributed.
  7. Divide mixture evenly among the 12 muffin cups, filling each about three-quarters full. Use a ¼-cup measure for consistent portions.
  8. Bake for 18-20 minutes, until tops are set and lightly golden, and a toothpick inserted into the center comes out clean. Start checking at 18 minutes.
  9. Cool in the pan for 5 minutes. Run a butter knife around edges to loosen, then transfer muffins to a cooling rack. Serve warm or let cool completely before storing.

Notes

Don’t skip the cottage cheese—it adds creaminess and protein. Sauté vegetables first to remove excess moisture and prevent soggy muffins. Avoid overbaking; check at 18 minutes. Let muffins cool in the pan for 5 minutes before removing. Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
