  • 4 cups (about 160g) mini marshmallows (recommend Jet-Puffed)
  • 6 cups (180g) Rice Krispies cereal (gluten-free version optional)
  • 1/2 cup (75g) red, white, and blue sprinkles
  • 1 teaspoon (5ml) vanilla extract

Instructions

  1. Lightly grease a 9×13-inch baking dish with non-stick spray or line it with parchment paper.
  2. Place 1/4 cup (57g) of unsalted butter in a large saucepan over low heat and melt slowly, stirring occasionally to avoid browning.
  3. Add 4 cups (about 160g) of mini marshmallows to the melted butter. Stir continuously with a wooden spoon or heat-resistant spatula until marshmallows are completely melted and smooth, about 4-5 minutes. Add 1 teaspoon (5ml) vanilla extract to loosen and brighten flavors if needed.
  4. Remove the pot from heat and quickly fold in 6 cups (180g) of Rice Krispies cereal, stirring gently but thoroughly to coat every piece.
  5. Reserve a small handful of sprinkles for topping and fold the rest into the mixture for even color.
  6. Pour the mixture into the prepared baking dish and press evenly and firmly with a buttered spatula or wax paper, being careful not to over-press.
  7. Sprinkle the reserved sprinkles evenly over the top and press lightly to adhere.
  8. Let the treats cool at room temperature for at least 30 minutes until firm, or chill in the fridge for 15 minutes to speed up setting.
  9. Cut into squares or festive shapes and serve immediately or store as desired.

Notes

Melt butter and marshmallows over low heat to avoid burning. Use mini marshmallows for best texture. Press mixture gently into pan to keep treats light and crispy. Vanilla extract brightens flavor. For dairy-free, substitute butter with coconut oil and use dairy-free marshmallows. Store in airtight container at room temperature for up to 3 days or freeze for up to a month.
