  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 2 ½ cups (312g) all-purpose flour
  • ½ tsp baking powder

  • 8 oz (226g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 1 ½ cups (180g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • 12 tbsp whole milk or cream
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries or halved cherries
  • Optional: fresh mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. In a large bowl, cream together 1 cup softened butter and 1 cup sugar until light and fluffy (about 3-4 minutes with a mixer).
  3. Add the egg and vanilla extract. Beat until combined, scraping down the sides as needed.
  4. In a separate bowl, whisk together 2 ½ cups flour, baking powder, and salt. Gradually add the dry ingredients to the wet, mixing on low speed until the dough forms.
  5. Press the dough evenly into the prepared pan, smoothing it out to the edges.
  6. Bake for 18-22 minutes, or until edges are golden and a toothpick inserted in the center comes out clean.
  7. Remove from oven and let cool completely in the pan (30-45 minutes).
  8. While the crust cools, prepare the cream cheese frosting: Beat together cream cheese and ½ cup butter until smooth. Slowly add powdered sugar and vanilla, mixing until creamy. Add milk 1 tablespoon at a time until spreadable consistency is reached.
  9. Once the crust is completely cooled, spread the frosting evenly over it.
  10. Arrange the fruit on top: a ring of blueberries around the edge, a circle of sliced strawberries, and raspberries or cherries in the center. Garnish with mint leaves if desired.
  11. Chill the fruit pizza for at least 1 hour before serving.

Notes

Use room temperature butter for best creaming results. Avoid overmixing the dough to keep the crust tender. Dry fruit well to prevent sogginess. Chill the pizza before serving to help the frosting set. Frozen berries can be used if thawed and drained. For gluten-free, substitute flour with a gluten-free blend. Dairy-free versions can use vegan butter and cream cheese substitutes.
