This ridiculously easy, one-bowl banana bread with walnuts brings back the simple joy of baking without the stress. It’s moist, tender, and full of nutty crunch, perfect for a weeknight treat.

Ingredients

Scale
  • 3 medium ripe bananas, mashed (about 1 ½ cups)
  • ⅓ cup unsalted butter, melted (75g)
  • ¾ cup granulated sugar (150g)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour (190g)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup chopped walnuts (60g)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5-inch loaf pan with butter or non-stick spray. You can also line it with parchment paper, leaving a little overhang on the sides for easy lifting.
  2. In your large mixing bowl, add the three ripe bananas. Use a fork to mash them until they’re mostly smooth with a few small lumps.
  3. Pour in the melted butter and the granulated sugar. Stir with your fork until everything is combined.
  4. Crack the egg into the bowl and add the vanilla extract. Stir until the egg is fully incorporated.
  5. Sprinkle the flour, baking soda, and salt over the wet mixture. Use your spatula or spoon to fold everything together gently. Stir just until you don’t see any more streaks of flour.
  6. Add the chopped walnuts and give the batter a few more folds to distribute them evenly.
  7. Transfer the batter to your prepared loaf pan. Use the spatula to spread it evenly into the corners. Give the pan a gentle tap on the counter to release any air bubbles.
  8. Bake for 55-65 minutes. Place the pan on the middle rack of your oven. Bake until the top is deep golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top is browning too quickly after 40 minutes, tent it loosely with foil.
  9. Let the bread cool in the pan for 10 minutes. Then, turn it out onto a wire rack to cool completely.

Notes

Don’t overmix the batter. Use room temperature ingredients. Toast walnuts for extra flavor. Check for doneness with a thermometer (internal temp 200-205°F). Let cool completely before slicing.
