Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Place the rack in the middle position. Grease your 9×5-inch loaf pan with butter or non-stick spray, or line it with parchment paper, leaving some overhang on the long sides for easy removal.
  2. Mash the bananas in your large mixing bowl using a fork or potato masher until mostly smooth with a few small lumps.
  3. Add the melted butter to the mashed bananas and stir until combined and glossy.
  4. Add the sugar, egg, and vanilla extract to the bowl. Stir vigorously until well combined and smooth.
  5. Sprinkle the baking soda and salt over the wet mixture and stir briefly. Then add the flour all at once. Stir gently just until no dry flour remains; a few streaks are okay.
  6. Fold in the chocolate chips gently until evenly distributed. Reserve a handful to sprinkle on top if desired.
  7. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan gently on the counter to release air bubbles. Sprinkle reserved chocolate chips on top.
  8. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil after about 40 minutes.
